Here's an easy fun dip to make for some of your holiday parties!

Crock-Pot Bacon Cheeseburger Dip


8 slices bacon
1/2 lb lean (at least 85%) ground beef
1 package (8 oz) cream cheese, cubed
1 package (8 oz) shredded American-Cheddar cheese blend (2 cups)
1 can (10 oz) diced tomatoes with green chiles, undrained
2 tablespoons chopped fresh parsley
2 medium red bell peppers, cut into bite-size strips
1 package (5.25 oz) mini bagel chips

Directions:

In 12-inch skillet, cook bacon over medium-high heat, turning occasionally, until crisp; drain on paper towels. Crumble bacon; reserve 2 tablespoons bacon for garnish.

In same skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Reduce heat to low. Stir in cream cheese, shredded cheese, tomatoes and crumbled bacon until well mixed and cheese starts to melt.

Pour mixture into 1- to 1 1/2-quart slow cooker. Cover; cook on Low heat setting 2 to 3 hours or until hot and bubbly.

Stir parsley into dip. Sprinkle with reserved bacon for garnish. Keep on Low heat setting to serve. Serve with bell pepper strips and bagel chips.

Here is my favorite white chili recipe - as featured in the October issue of Colorado Parent Magazine!

Crock-Pot White Chili

3 - Boiled Chicken Breasts

1 - Onion Chopped

4 - Crushed Garlic Cloves

2 - 15 oz. Cans Great Northern Beans

1 - 15 oz. Can Garbanzo Beans

1 - 15 oz. Can White Hominy

2 - Cups Frozen White Corn

2 - 15 oz. Cans Chicken Broth (Add additional 3rd can of broth if you'd like it more soupy)

1 - Teaspoon Cumin

2 - 4 oz. Cans Of Diced Green Chilies

2 - 4 oz. Cans Chopped Jalapenos

Salt and Pepper to taste

Boil chicken breasts until cooked

Open all cans and DO NOT DRIAN

Combine all ingredients in Crock-Pot

Place on high for 5 to 6 hours

Take out chicken and shred up - then place back in crock -stir

Serve with white corn chips or corn bread - topped with shredded Monterey Jack cheese

You're gonna want to put this in your cake hole.

Crockpot Glazed Cinnamon Coffee Cake

Topping:
¼ cup biscuit baking mix (like Bisquick)
¼ cup packed light brown sugar
½ tsp cinnamon
Batter:
1½ cups biscuit baking mix
¾ cup white sugar
½ cup vanilla or plain yogurt
1 large egg, lightly beaten
1 tsp vanilla
Glaze:
1 tbsp milk plus a little more
½ cup powdered sugar

Instructions:
  1. Grease a 4-quart crock
  2. Cut a piece of parchment paper to fit the bottom of the stoneware and press into place.
  3. Spray with cooking spray too.
  4. Blend all streusel ingredients in a small bowl and set aside.
  5. Then, mix all batter ingredients in a medium bowl until well blended.
  6. Spoon ½ batter into crock.
  7. Sprinkle ½ streusel mixture on top and then repeat with remaining batter and streusel.
  8. Make glaze and set aside.
  9. For glaze, whisk milk and powdered sugar until slightly runny in consistency.
  10. Line lid with 2 paper towels and cover tightly.
  11. Cook on high for 1¾ to 2 hours or until toothpick inserted in center comes out clean.
  12. Let cake rest 10 minutes and then invert onto plate, peel off parchment paper.
  13. Then invert again onto serving platter.
  14. Once cool, spoon glaze over top.

Stand back....this is probably the greatest recipe you'll ever see!

Crockpot Buffalo Chicken Tater Tot Casserole

Ingredients:

1 pound ground chicken
1 tablespoon olive oil
¼ cup flour
1½ cups chicken broth
¼ cup cream, buttermilk, or milk
1 teaspoon dried parsley
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried dill
1 teaspoon dried chives
1 teaspoon salt
¼ teaspoon pepper
32 oz frozen tater tots
2 tablespoons butter
½ cup buffalo wing sauce
½ cup shredded carrots (optional)
¼ cup chopped celery (optional)
1½ cups shredded cheddar cheese (I used sharp cheddar)
¼ - ½ cup blue cheese (optional, depending on taste)

Instructions:
1.Heat olive oil in large skillet over medium high heat
2.Add ground chicken and cook (breaking up with spatula) until no longer pink
3.Sprinkle in flour and stir to coat cooked chicken
4.Slowly stir in chicken broth and bring to a simmer for 2-3 minutes to thicken and reduce sauce
5.Stir in cream (or buttermilk or regular milk)
6.Add dried seasonings and salt and pepper and stir all to combine
7.Let cook an additional 2-3 minutes until sauce is nice and thickened up
8.Melt butter in microwave in large microwave safe mug or cup
9.Add buffalo sauce and stir to combine
10.Spray crock well with nonstick spray
11.Add ½ of the tater tots
12.Drizzle with ½ of the buffalo sauce/butter mixture
13.Cover with the meat mixture
14.Top with carrots, celery and blue cheese if desired
15.Add remaining tater tots and drizzle with remaining buffalo sauce
16.Top with shredded cheddar cheese
17.Cover and cook on low for 5-6 hours or high for 2-3 hours

Crock Pot Creamy Chicken Alfredo

Ingredients:

Cooking spray
4 (4 ounce) skinless, boneless chicken breast halves
1/4 cup water
1 (.7 ounce) package dry Italian-style salad dressing mix
1 clove garlic, pressed
1 (8 ounce) package cream cheese, softened
1 (10.75 ounce) can condensed cream of chicken soup
1 (4.5 ounce) can chopped canned mushrooms
1 (8 ounce) package spaghetti
1 tablespoon chopped fresh parsley


Directions:

1. Spray the crock with non-stick cooking spray. Place chicken breasts in crock. Combine Italian dressing mix, and water in a small bowl. Pour over chicken; sprinkle with garlic, cover, and cook on Low 4 hours.

2. After 4 hours, whisk softened cream cheese and cream of chicken soup together in a bowl. Pour over chicken; stir in mushrooms. Cover and cook on Low for 1 additional hour.

3. Cook the pasta

4. To serve, spoon chicken and sauce over hot cooked pasta and sprinkle with parsley.

How about waking up to a nice warm breakfast on a chilly day!? Ummmmm, yes please.

Crock Pot Breakfast Casserole

Ingredients:

1 32 oz. bag frozen hash brown potatoes
1 lb. bacon, diced, cooked and drained OR 1 lb. cooked ham, cubed
1 med. onion, diced
1 green bell pepper, diced
1 1/2 C. cheddar or Monterrey Jack cheese, shredded
1 dozen eggs
1 C. milk
1 tsp. salt
1 tsp. pepper (more or less to taste)

Directions:

1. Place a layer of frozen potatoes on the bottom of the crock followed by a layer of bacon then onions, green pepper and cheese.
2. Repeat the layering process two or three more times, ending with a layer of cheese.
3. Beat the eggs, milk, salt and pepper together.
4. Pour over the Crockpot mixture, cover and turn on low.
5. Cook for 8-9 hours on LOW

Crock Pot Baked Apples

Made this LAST Halloween for the family and they cried tears of joy.

Ingredients:

1/4 cup brown sugar
1/4 cup walnuts, chopped
2 tablespoons trans-fat free margarine or butter
1 teaspoon cinnamon - or more if you really like cinnamon
6 Gala or Macintosh apples, cored
1/2 cup apple juice or apple cider
2 tablespoons orange liquor (optional ya boozer)

Instructions:

In a large bowl, mix brown sugar, walnuts, margarine or butter, and cinnamon.

Use a small pairing knife and core the apples, I leave about ½ inch apple left at the bottom.

Fill the apples with the filling and place them in the crock.

Set the crock on high heat and cook 2½ to 3 hours until the apples are soft and begin to collapse.

Serve with a little vanilla ice cream on the side.

Crock Pot Sweet Potato Chili


Ingredients:

1-28 ounce can diced tomatoes
1- 23 ounce can tomato sauce
3 tablespoons chili powder
2 tsp cayenne pepper
2 tablespoons ground cumin
2 teaspoons paprika
5 tablespoons brown sugar
1/2 teaspoon salt
2 large sweet potatoes, peeled and chopped into 1" pieces
1 medium onion, coarsely chopped
2 cloves garlic, minced
2 15 oz cans kidney beans, drained
1 cup corn, frozen
1 lb ground beef sirloin
1 cup chicken broth

Directions:
Combine all ingredients in the base of your slow cooker and stir to mix well. Cook on low for 8 hours. Easy Right?!

Crock-Pot Triple Chocolate-Peanut Butter Pudding Cake


Ingredients:
Nonstick cooking spray
1 cup all-purpose flour
1/3 cup sugar
4 tablespoons unsweetened cocoa powder
1 1/2 teaspoons baking powder
1/2 cup chocolate milk
2 tablespoons vegetable oil
2 teaspoons vanilla
1/2 cup peanut butter-flavor pieces
1/2 cup semisweet chocolate pieces
1/2 cup chopped peanuts
3/4 cup sugar


Directions:
Lightly coat the inside of a 3 1/2- or 4-quart Crock-Pot with cooking spray and then set aside.
In a medium bowl, stir together flour, 1/3 cup sugar, 2 tablespoons cocoa powder, and baking powder.
Add chocolate milk, oil, and vanilla; stir just until moistened. Stir in peanut butter pieces, chocolate pieces, and peanuts.
Spread batter evenly in the prepared crock.
In another medium bowl, combine 3/4 cup sugar and 2 tablespoons cocoa powder. Gradually stir in boiling water.
Carefully pour cocoa mixture over batter in cooker.
Cover and cook on high-heat setting for 2 to 2 1/2 hours or until a toothpick inserted into center of cake comes out clean.
Remove lid and turn off crock.
Let stand, uncovered, for 30 to 40 minutes to cool slightly.
To serve, spoon pudding cake into dessert dishes. If desired, top with ice cream and chocolate bar pieces.

Crock Pot Creamy Chicken Noodle Soup

Ingredients:
4 cups cooked chicken breast, chopped up (I boiled it for about 10 mins or until pink was gone from center)
1 cup onion, diced
1 cup celery, diced
1 cup carrot, diced
1/2 cup frozen peas
4 (14 ounce) cans low sodium chicken broth
2 (10 3/4 ounce) cans condensed cream of mushroom soup
2 teaspoons each of these fine herbs - chervil, chives, parsley, and tarragon
Salt n' Pepper, to taste (not the band)
2 cups egg noodles, cooked

Directions:
Put the chicken into a slow cooker with the onions, celery, carrots and peas.
Stir in broth, mushroom soup, and herbs. Season with salt and pepper.
Cover and cook on high for 3 to 4 hours or low for 7 hours
When soup is finished, stir in egg noodles.
Season to taste and serve. Enjoy!

Check out these balls, the perfect appetizer for a party at Dom's house!

Honey Garlic Crockpot Meatballs

Ingredients:

1/4 cup brown sugar
1/3 cup honey
1/2 cup ketchup
2 TB soy sauce
3 cloves garlic, minced
1 (28oz) bag fully cooked, frozen meatballs

Directions:

1. In a bowl, use your wrist to mix together brown sugar, honey, ketchup, soy sauce and garlic.

2. Place frozen meatballs in a 3-4 quart crock and pour sauce over the balls of meat. Stir so all of the balls of meat are coated evenly. Cook on LOW for 4 hours, stirring and huffing the goodness occasionally.

Mind BLOWN I know right?! Get a broom, sweep up your brains and then make this amazeballs dish!

Crock Pot Chicken Bacon Ranch Pasta

Ingredients:

3 garlic cloves, minced
1 package ranch dressing mix
1 10.75 oz can condensed cream of chicken soup
1 cup Greek yogurt (or sour cream)
1 lb boneless, skinless chicken breasts
1/2 c. Real Bacon Bits
3 cups pasta

Instructions:

1. Spray inside of crock with non stick cooking spray. Place chicken breast in crock.

2. Mix cream of chicken soup, Greek yogurt, garlic and ranch dressing mix, bacon bits in a small bowl. Pour over chicken.

3. Cook on high 3 1/2 hours or on low for 6-7 hours.

4. When chicken is done cook pasta according to directions. Serve with chicken mixture.

Crock – Pot Honey Sesame Chicken

Ingredients:

4 boneless, skinless chicken breasts
1 cup honey
½ cup soy sauce
1 cup diced onion
¼ cup ketchup
2 tablespoons vegetable or canola oil
2 cloves garlic, minced
¼ teaspoon red pepper flakes
1/2 teaspoon pepper
1 heaping tablespoon cornstarch
1/3 cup water
Sesame seeds

Directions:

1. Combine the honey, onion, garlic, soy sauce, ketchup, oil, red pepper flakes & pepper into the crock. Add chicken and stir that baby up, covering em' up with the sauce.

2. Cooker on Low for 4 hours. Make sure the chicken is done!

3. After 4 hours remove the chicken from slow cooker leaving sauce inside. Turn the heat to high.

4. Whisk up the cornstarch and water then pour into the crock. Combine with sauce in the crock. Replace lid and cook sauce on high 10 more minutes or until slightly thickened.

Shred the chicken, place back in the crock and toss with sauce before serving this bad boy up!

Sprinkle with sesame seeds and serve over rice.

Crock-Pot Fiesta Mac and Cheese

Ingredients
:

2 cups of pasta of your choice, uncooked
3 T butter
8 oz American processed cheese, all cubed up. Mmmmmm processed cheese.
8 oz cream cheese, all cubed up
1 c low fat milk
1/2 c heavy whipping cream
1 t Dijon mustard
12-oz can evaporated milk
2-10 oz cans Ro-Tel diced tomatos with green chilis, drained

Instructions:

Spray a 3-1/2 quart crock pot with cooking spray.
Put uncooked pasta in the bottom of your crock pot.
Add all of the remaining ingredients EXCEPT your Ro-Tel diced tomatos with green chilis
Cover and cook on low for 4 hours.
Just before serving, add Red Gold tomatoes and stir to combine.

I witnessed a special event this weekend at Colorado Off Road in Littleton - in conjunction with the Rollin' Dreams Foundation.

Colton is a Rollin' Dreams kid in his 4th battle with cancer and he needed something awesome to lift his spirits and to give him hope. Jerry the owner of Colorado Off Road took Colton's truck and did a complete makeover on it! Lifted, new wheels and tires, a bed cover and much more!

A big thank you to Rollin' Dreams and to Jerry for collecting the donations and for taking the time to make this project a reality! Jerry went above and beyond what was asked and he did an exceptional thing for Colton!

Colorado Off Road was awarded the very first Winners' Circle award for extraordinary community service from Rollin' Dreams.

Crock Pot Pumpkin Soup

Ingredients:

1oz butter
2lb Pumpkin – peeled and cut into inch square pieces
1 medium onion
2 cloves stuck into the onion
2 tspn sugar
Salt to taste – pinch
2½ cup Chicken Stock
1 cup Milk
Nutmeg to sprinkle on top

Directions:
1. Place butter and pumpkin in crock pot and put onto high. When butter has melted, stir to coat pumpkin and cook for 1 hour on high.
2. Add onion, sugar, salt and stock. Cover and cook for 8-9 hours on Low OR 4-5 hours on High.
3. When ready to serve, remove the onion.
4. Puree soup in a blender or use a hand held device.
5. Add milk, to achieve correct consistency
6. Serve with a sprinkling of Nutmeg and a dollop of sour cream.

Serves 4

Crock-Pot Sriracha Honey Chicken Wings


4 pounds chicken wing drumettes, frozen
3/4 cup Sriracha sauce
3/4 cup honey
2 tablespoons unsalted butter
Juice of one lime (about 1/4 cup) Don't get it in your eye!

Combine Sriracha sauce, butter, honey and lime juice in to your crock. Stir to combine. Add chicken wings. Stir until wings are well coated. Cook on low 6-8 hours or high for 3-4 hours.

Remove wings from slow cooker and place on a baking sheet lined with foil. Drizzle sauce from slow cooker over wings.

Set oven to broil. Place baking sheet in oven and bake for 2-3 minutes until the sauce starts to caramelize. Remove from oven, serve, cry tears of pure joy.

Crock Pot Chocolate Lava Cake

Crock Pot chocolate lava cake needs a place in your mouth. Enjoy!

Cake
1 box chocolate fudge cake mix
1 1/4 cups milk
1/2 cup vegetable oil
3 eggs

Topping
1 box (4-serving size) instant chocolate pudding and pie filling mix
2 cups milk
1 bag (12 oz) milk chocolate chips (2 cups)

Directions
Spray 6-quart slow cooker with cooking spray. In large bowl, beat cake ingredients with electric mixer as directed on cake mix box. Pour into slow cooker.
In medium bowl, beat pudding mix and 2 cups milk with whisk as directed on box. Pour into slow cooker over cake batter. Do not mix. Sprinkle chocolate chips over top.
Cover; cook on Low heat setting 2 hours 30 minutes to 3 hours or until cake is set and pudding is beginning to bubble out of cake.

Say "mmmmmmmmmmmm" when you eat it.

Balsamic Roast Beef Recipe

Serves: 6-8

Ingredients
1 3-4 pound boneless roast beef
1 cup beef broth
½ cup balsamic vinegar
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon honey
½ teaspoon red pepper flakes
4 cloves garlic, chopped

Instructions:
  1. Place roast beef into slow cooker. In a bowl mix together all ingredients then pour over roast beef. Cook for 4 hours on high or 7 hours on low
  2. Once roast beef has cooked, remove from slow cooker and break apart lightly with two forks and then ladle about ¼ - ½ cup of gravy over roast beef.
  3. Serve with your favorite side - I suggest mashed potatoes :)
